Kale, Pea and Lemon Pasta

 



Ingredients

  • 250g pasta (I’ve used leftover off cuts but you can use anything you like)
  • 1 lemon
  • 1 cup roughly chopped kale
  • 1/2 cup frozen peas
  • 100g unsalted butter

Method

  1. Place a pot of water on the stove to boil. Add a generous pinch of salt and add the pasta.
  2. While the pasta is cooking, melt the butter in a pan over a medium heat before adding the kale, lemon and lemon zest. Sautée until the kale is bright green and add the peas. Turn off the heat.
  3. Transfer the pasta with tongs directly to the pan while it’s still hot, incorporating a small amount of the cooking water. Toss everything together and season to taste. Serve with a generous grating of parmesan.
