Prawn and Chorizo Spaghetti

 I put some vegetables into this one because health. 



Ingredients

  • 200g spaghetti
  • 100g chorizo, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 small red chilli, finely chopped
  • 200g green prawns, peeled and deveined
  • 1/4 cup frozen peas
  • 1 cup baby spinach
  • 50g unsalted butter
  • 1 handful parsley, finely chopped
  • 1 lemon, zest and juice

Method

  1. Place a large pot of water on the stove over a high heat and bring to the boil. Add a big pinch of salt and add the spaghetti. 
  2. While the pasta cooks, place a large pan or skillet over a high heat and add the chorizo. The fat should render out creating a few teaspoons of oil in the pan after about a minute. If not, add a drizzle of olive oil. Add the garlic and chilli, stirring quickly. Add the prawns and combine all ingredients together. Just before the pasta is ready, stir through the peas, spinach, butter and lemon zest & juice. 
  3. When the pasta is al dente, turn the heat off the sauce and transfer the pasta directly to the pan from the pot. Obviously do not pour all the water in with the pasta, just use some tongs (I know you're not this silly but there are some dumb dumbs out there). Toss the pasta through the sauce and season to taste.
