Warm Lentil Salad
You don't make friends with salad but maybe we can have a brief fling with this one because bacon.
Ingredients
- 1/4 red onion, diced
- 1tsp crushed garlic
- 1/4 cup bacon, chopped
- 2tbs flaked almonds
- 1tsp preserved lemon skin, diced
- 1 can lentils, drained
- 1 handful sultanas
- 1tbs goat's cheese
- 1/4 cup parsley
- 1/2 a lemon
Method
- In a pan over a medium heat, heat a splash of olive oil and fry onion for five minutes. Add the garlic, bacon and almonds, tossing while cooking for a further five minutes.
- Turn off the heat and add the lentils, preserved lemon and sultanas. Stir through and season to taste.
- To serve, crumble over the goat's cheese, sprinkle with parsley and squeeze the lemon over the salad generously.
