Warm Lentil Salad

 You don't make friends with salad but maybe we can have a brief fling with this one because bacon.





Ingredients

  • 1/4 red onion, diced
  • 1tsp crushed garlic
  • 1/4 cup bacon, chopped
  • 2tbs flaked almonds
  • 1tsp preserved lemon skin, diced
  • 1 can lentils, drained
  • 1 handful sultanas
  • 1tbs goat's cheese
  • 1/4 cup parsley
  • 1/2 a lemon

Method

  1. In a pan over a medium heat, heat a splash of olive oil and fry onion for five minutes. Add the garlic, bacon and almonds, tossing while cooking for a further five minutes. 
  2. Turn off the heat and add the lentils, preserved lemon and sultanas. Stir through and season to taste.
  3. To serve, crumble over the goat's cheese, sprinkle with parsley and squeeze the lemon over the salad generously.
