Mascarpone and Tomato Tart

 This tart takes under twenty minutes to make and only requires four ingredients- it's almost rude not to make it.


Ingredients

  • 2 cups cherry tomatoes
  • 250ml mascarpone cheese
  • A handful fresh basil leaves
  • 1 sheet puff pastry

Method

  1. Pre-heat oven to 180 degrees.Grease a pie tin and line with puff pastry. Blind bake for 15 minutes until golden.
  2. While the pastry is cooking, toss 2 cups halved cherry tomatoes with olive oil and sprinkle with sea salt. Bake in the oven for 15 minutes until blistered.
  3. Remove pastry from the oven and spoon 250ml of mascarpone cheese over pastry, smoothing evenly. Pour tomatoes and juices over mascarpone. Sprinkle with basil leaves before serving.
