Mascarpone and Tomato Tart
This tart takes under twenty minutes to make and only requires four ingredients- it's almost rude not to make it.
Ingredients
- 2 cups cherry tomatoes
- 250ml mascarpone cheese
- A handful fresh basil leaves
- 1 sheet puff pastry
Method
- Pre-heat oven to 180 degrees.Grease a pie tin and line with puff pastry. Blind bake for 15 minutes until golden.
- While the pastry is cooking, toss 2 cups halved cherry tomatoes with olive oil and sprinkle with sea salt. Bake in the oven for 15 minutes until blistered.
- Remove pastry from the oven and spoon 250ml of mascarpone cheese over pastry, smoothing evenly. Pour tomatoes and juices over mascarpone. Sprinkle with basil leaves before serving.
