Blueberry Muffins
I HATE baking but these are so easy, you'll wonder why you didn't try them sooner. I don't use much sugar in these as I'm not much of a sweet tooth but feel free to double the amount.
Ingredients
- 2 cups self raising flour
- A pinch of salt
- 2 tbs caster sugar
- 3/4 cup milk
- 4 tbs melted butter
- 2 eggs
- 1 tsp vanilla extract
- 2 cups frozen blueberries
- 2 tbs brown sugar
Method
- Preheat fan forced oven to 180 degrees. Mix the flour, salt and caster sugar, in a large mixing bowl.
- In a separate bowl, beat the eggs. Add the melted butter, vanilla extract and the milk. Combine well. Stir the liquid ingredients into the dry, ensuring not to over mix.
- Fold the blueberries into the mixture gently so as to not end up with purple muffins. Spoon into the prepared muffin pans, allowing the mixture to fill about 2/3 of the cup. Sprinkle with brown sugar. Bake for 20 minutes or until a light golden colour.
