Blueberry Muffins

I HATE baking but these are so easy, you'll wonder why you didn't try them sooner. I don't use much sugar in these as I'm not much of a sweet tooth but feel free to double the amount.


Ingredients

  • 2 cups self raising flour
  • A pinch of salt
  • 2 tbs caster sugar
  • 3/4 cup milk
  • 4 tbs melted butter
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups frozen blueberries
  • 2 tbs brown sugar

Method

  1. Preheat fan forced oven to 180 degrees. Mix the flour, salt and caster sugar, in a large mixing bowl.
  2. In a separate bowl, beat the eggs. Add the melted butter, vanilla extract and the milk. Combine well. Stir the liquid ingredients into the dry, ensuring not to over mix.
  3. Fold the blueberries into the mixture gently so as to not end up with purple muffins. Spoon into the prepared muffin pans, allowing the mixture to fill about 2/3 of the cup. Sprinkle with brown sugar. Bake for 20 minutes or until a light golden colour.
