Eggy crumpets with caramelised banana

Sweet, indulgent and oh so delicious.

Serves 1

Ingredients

  • 2 crumpets
  • 1 egg
  • 1 tbs milk
  • 1 banana
  • 1 tbs brown sugar
  • a pinch of cinnamon
  • 2 tbs butter

Method

  1. Heat 1 tbs butter in a pan over a medium heat. Whisk an egg in a bowl with the milk and salt & pepper. Dip the crumpet into the egg mixture, coating both sides well. Place into the pan and fry until golden brown before flipping. Once both sides are cooked, place on a plate in a warm oven until needed.
  2. Heat 1 tbs butter in a pan over a medium heat. Slice a banana in half length ways and sprinkle with the sugar and cinnamon evenly. Place these in the pan and cook on both sides until caramelised.
  3. To serve, carefully place the banana on the crumpets and drizzle with honey.
