Thai Beef Salad

This salad is better than anything you'll get at your local Thai and if you don't believe me, try it then come find me to apologise. 

Ingredients

Salad

  • 1 cup each of finely chopped mint, basil and corriander
  • 2 cups baby spinach
  • 1 red capsicum, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely diced
  • 1 cucumber, chopped
  • 100g soba noodles, cooked and cooled
  • 500g scotch fillet steak
  • 2tbs soy sauce

Dressing

  • 2tbs soy sauce
  • 2tbs fish sauce
  • 1tbs crushed garlic
  • 1tbs crushed ginger
  • 2tbs sweet chill sauce
  • Juice of 2 limes

Method

  1. Marinate the steak in the soy sauce and bring to room temperature. Meanwhile, prepare all salad ingredients and combine. Display on a large platter and set aside. 
  2. Place a pan on a high heat. Sear steak on each side for two minutes before removing from the heat and leaving to rest for 10 minutes. Slice into thick strips and arrange over salad. 
  3. Combine all ingredients for the dressing and drizzle over the salad just before serving.
