Carrot and cumin soup

This will cost you less than a cup of coffee and is great as a meal for one very hungry person or two people with small appetites.

Serves 1 or 2

Ingredients

  • 750g carrots roughly chopped
  • 1 onion roughly chopped
  • 2 cloves garlic roughly chopped
  • 1 tbs cumin
  • 2 tbs olive oil

Method

  1. Heat olive oil in a large bot of a medium heat, adding the onions, stirring until they are caramelised. Add the garlic and cumin, stirring for a minute until fragrant. Add the carrots and cover with water. Bring to the boil then simmer with a lid on for about 45 minutes or until the carrots are tender.
  2. Use a stick blender to blitz the ingredients until smooth. Season to taste.
