Kale, Pea and Lemon Pasta
Ingredients
- 250g pasta (I’ve used leftover off cuts but you can use anything you like)
 - 1 lemon
 - 1 cup roughly chopped kale
 - 1/2 cup frozen peas
 - 100g unsalted butter
 
Method
- Place a pot of water on the stove to boil. Add a generous pinch of salt and add the pasta.
 - While the pasta is cooking, melt the butter in a pan over a medium heat before adding the kale, lemon and lemon zest. Sautée until the kale is bright green and add the peas. Turn off the heat.
 - Transfer the pasta with tongs directly to the pan while it’s still hot, incorporating a small amount of the cooking water. Toss everything together and season to taste. Serve with a generous grating of parmesan.
